APITO PASTE RELAXER
Powdered pastry relaxer to prevent shrinkage of puff and pie pastry. Provides better machinability and prevents sticking through the rollers. For cost effectiveness also allows a percentage of scrap paste to be added to fresh pastry.

Also very effective allowing the inclusion of 'pinning scrap' when preparing scones.

  • 1,5% on flour weight in Puff Pastry
  • 5% on flour weight in Pie & Sweet Pastry
  • 2-3% on flour weight in Pizza Dough
